Silverbeet and ricotta pizza
Serves 4

Ingredients

1 large red onion, halved, thinly sliced

2 garlic cloves, crushed

Olive oil spray*

2/3 cup tomato passata sauce

6 large silverbeet leaves, stalk removed, leaves shredded

3/4 cup shredded reduced fat mozzarella*

200g fresh reduced fat ricotta cheese*

Black pepper, to season
Pizza dough: (see Tip)

200ml warm water
-
7g sachet instant dried yeast

Pinch salt

1/4 tsp caster sugar

1 tbs olive oil*

2 cups plain flour

Preheat oven to 220°C fan-forced.

Pizza dough: Combine the water, yeast, salt, sugar and oil in a large bowl. Add the flour and mix to form a soft dough. Turn dough onto a lightly floured surface and knead for 8 minutes until elastic, or place into a mixmaster and beat with a dough hook for 5 minutes. When you press the top of the dough it should bounce back and leave no indentation. Cut the dough in half. Roll each piece of dough out to 28cm round.

Combine the onion and garlic in a microwave-safe bowl, spray lightly with cooking spray. Cover with damp paper towel and microwave on High for 1 ½ minutes until soft. Spread 1/3 cup passata sauce over each pizza round. Top with onions and bake for 12 minutes.

Remove the pizzas from the oven, scatter over the silverbeet, top with mozzarella then drop spoonfuls of ricotta onto the silverbeet. Return to the oven and bake a further 5-10 minutes until pizza base is golden and crisp and silverbeet wilted. Season with freshly ground black pepper and serve.
Tip: It’s easy to make your own healthy pizza dough, but if you’re short on time you can buy two large reduced fat pizza bases and skip step 2.
